Dark Chocolate Avocado Protein Truffles

I’ve always had a big sweet tooth, especially for chocolate, and needed a little extra something sweet after dinner. I’m all for swapping your classic chocolate candy or cookies for healthier alternatives, but let’s be real when you want chocolate, no frozen fruit or hot tea is going to change that. But if you’re anything like me, you’ve also had the intention of only eating one square of chocolate, one Hershey’s kiss, or one brownie, and then somehow 5 are gone before you even know it.

If you’re like me and can’t seem to tame that sweet tooth, or just need something quick and easy that you’ll feel good about eating at galentines, I have just the thing!! These melt in your mouth dark chocolate truffles are only 6 ingredients and pack plenty of protein, healthy fats, and micronutrients such as magnesium and antioxidants into each bite! This means they won’t spike your blood sugar causing you to feel like you can’t stop reaching your hand into the family-size M&M bag. Plus they are boyfriend approved for all of the hershey’s candy lovers in your life!

What You’ll Need


1/2 avocado

1 scoop of chocolate protein powder (I used Be Well by Kelly’s protein)

1/2 cup dark chocolate chips (I used Enjoy Life)

4 tbsp cocoa powder

1 tbsp coconut oil

1 tsp vanilla

PInch of salt

Optional:

Add nut butter in to make different flavored truffles

Add sweetener (coconut sugar, honey, maple syrup, powdered sugar or stevia) if you want them a little sweeter

Add frozen berries

Add mint or peppermint for a holiday treat

Top with cocoa powder (pictured), coconut flakes, chia or hemp seeds, or peanuts


Method


Mash the avocado into a bowl until it is completely smooth. You can also use a blender or food processor. Melt the chocolate chips and coconut oil in a microwave-safe bowl at 30-second increments or on the stove in a double broiler. Once melted, mix into the bowl with the avocado. Add the protein powder and 2 tbsp cocoa powder to the bowl. If the mix becomes too dry, add 1 tbsp of nut milk. Add a pinch of salt. Once you have a mouse-like consistency, place it in the refrigerator for 20 minutes to harden. Next, roll the mix into balls and coat with your topping of choice. Place back into the refrigerator for 20 minutes.
